LAST Late Fall CSA – December 21, 2016

Welcome to the last week of our Late Fall CSA. This will be our 38th continuous CSA delivery. And some of you have been with us for the entire season. We thank you all. 
This past week the winter weather finally set in and it was a mad dash to clean up the fields and harvest as much as possible. After quite a few years of winter growing I am still blown away by the many crops that can withstand extreme cold. Our fields have been covered with row cover for many weeks and just this thin cloth is enough to keep the crops alive. Wind is our biggest threat. This has been such a windy fall. 
This past year we rebuilt our large hoop house after it had collapsed in a large snow storm in early 2016. We are proud to say that the house is standing stronger now and filled with greens and roots that will fill your boxes this week. 
We are all ready for a bit of a rest this winter. Most people ask us what we do in the winter…we don’t stop working. We will be attending the Malvern Farmers’ Market and the West Reading Farmers’ market this winter. Check our website for dates: http://bhorganicproduce.com/upcoming-events/ . We are working steadily on the details  our 2017 CSA season and plan to have sign ups available in the beginning of January. And we are also working on a series of workshops in our greenhouse this winter. So look for updates via email, Facebook and Instagram.

Storing your last CSA harvest
Sure you may just eat up all your veggies this week. But what if you are busy and can’t eat them all this week? What if you still have some veggies in your refrigerator from the week before? Almost all the crops we will harvest for your CSA box this week can be stored. In fact most of them stopped growing weeks ago when the length of day became much shorter. The crops stay in the fields and hoop houses much like if they were in your refrigerator. It is so cool. Here are some hints for storing your share. Check it out – some of them will store for months!! 
Most of this information comes from the Johnny’s Selected Seeds website: 
  • Potatoes – Store in a dark cooler at 40°F/4.4°C and 95% relative humidity. Healthy tubers can store for 5 months or more under the proper conditions.
  • Sweet Potatoes – Place roots in crates or vented boxes and store in dark at 60°F/16°C and 85% relative humidity. Do not allow the storage temperature to drop below 50°F/10°C, as this will chill and injure the roots. Properly handled roots can be stored for 7 months or more.
  • Winter squash – Store at 50–60°F/10–15°C, with 50–70% relative humidity and good ventilation. Repeated exposure to temperatures below 50°F/10°C may cause chilling damage.
  • Cabbage – Store with a few of the outside wrapper leaves at 32°F/0°C and 90–100% humidity.
  • Celeriac – will keep for 3–5 months when stored at 32°F/0°C and 90–100% humidity.
  • Carrots, Radish, Turnips and Beets – Trim tops (stems and leaves) to ¼” in length. All varieties will keep for 3–5 months when stored at 32°F/0°C and 90–100% humidity. 
  • Pac choi and Tatsoi – Will store up to 3 weeks when stored at 32°F/0°C and 90–100% humidity.
  • Garlic – The optimum long-term storage temperature for garlic is 35 to 40 degrees F. In warmer temperatures, garlic will begin to sprout. Dryness and complete darkness are essential.

  • Kale OR Swiss Chard – 8oz. (This Kale could be Lacinato or Red Russian.)
  • Spinach OR Salad Mix – 7 oz. / 5 oz.

Late Fall CSA – December 14, 2016

 

The mad dash of the holidays is in full swing. Don’t forget to eat your fresh veggies this time of year to build up your immune system! When growing in the field, plants need to protect themselves from the cold weather so, they also have immune systems. In response to stress they produce antioxidants. Antioxidants are essential to our health. Eating fresh foods this time of year is important. Many of the vegetables we are eating now are root vegetables, which have added minerals from growing below the soil. If you can, try to avoid peeling your veggies. Many of these minerals and antioxidants are in the skins and outer leaves. This is truly a beautiful system.

Featured Crop
Each week we like to feature a vegetable from our list that we feel is in its prime. A crop is often filled with the most energy and nutrition when it is at its peak.
Radishes
I love Radishes. They are often the forgotten vegetable that only finds its home on top of a salad. Yes, this is a great way to eat a radish, but if you have never tried them any other way you are missing out. Radishes are a great storage crop. Any radishes you order can be stored without greens in your refrigerator for several months.
Are you often afraid of the spiciness of a radish? Have you eaten a radish after a frost? The flavor of a radish this time of year is much sweeter and only has a hint of spiciness. It is divine.
In Chinese Medicine radishes are used to clear out stagnation in the body. Radishes are perfect for cleaning out the respiratory system during cold season.
And don’t forget that you can eat the radish greens. Radishes are in the arugula family and will have a similar flavor. Most radish greens have a prickly texture and are best sautéed or put into a hot soup.
This week we are offering 3 different types of radishes:
  • Small Red Radishes – red skinned with a white center.
  • Daikon Radishes – long white radishes.
  • Watermelon Radishes – this is a type of daikon with a slightly green skin and a hot pink center.

Late Fall CSA – December 7, 2016

 

 

 

The weather has been mild and the company has been sweet but I have to say it has been a rough Late Fall season for B & H this year. I always hesitate to complain about being a farmer and the weather. I always try to make the newsletters happy and sweet. And then at some point I need you to know that we have been working extra hard to make sure you have a nice selection and a quality product in your boxes each week. I believe we have succeeded but I would be lying if I said it was easy. Due to several unseen circumstances we have had to order in most of the root crops that you see on the order list. They do come from a certified organic farm in our area. We know the growers very well and feel confident in their product but due to the fact that we have to purchase most of these crops we are unable to give you any extra bounty. That being said we are very confident that you are getting your money’s worth. We are grateful for your support in this tough time. And we know that you understand that being a CSA member means a lot to a farm that is having trouble with their crops. CSA members support the farm no matter what the farm is able to produce. Our CSA is unique in that we do not make the customer bear the brunt of the loss of the crops. You will only be limited in selection.
We see a bright future ahead for the winter markets and spring. We are farmers and what farmer’s do best is push through and prepare for the next season. We will see you there!

Broccoli Shoots
What the heck are broccoli shoots you ask? Broccoli shoots are the small broccoli heads that the broccoli plant produces after the main broccoli head has been harvested. Aka… Baby Broccoli. I adore these things. They are essentially mini broccolis and so you can eat them whole and eliminate the cutting. This week they will come with leaves. Don’t dismiss these leaves. They have the same nutritional content as kale and currently are sweeter and tenderer than kale. This is another 2 for one crop. 
How do you eat them?
  • You can peel the leaves off and prepare them the way you would kale. If you need kale this week.
  • The baby broccolis can be eaten raw, sautéed, steamed, roasted or put in soups. The same way you would eat any broccoli. I highly recommend leaving the leaves on for the added nutrition and texture.

Late Fall CSA – November 30, 2016

Welcome to the 5th week of our Late Fall CSA. We hope you are enjoying the wonderful flavors of fall. If you read the featured crop section of this newsletter last week you will know that many of the crops have more complex flavors this time of year. Leafy greens and root vegetables take a new flavor with the crisp nights. They will have the most unique mix of sweet, bitter and spicy. The flavors are most intense when the vegetables are first harvested. This is the advantage of having a CSA share with B & H. The crops are harvested fresh and at their peak. You will not be able to experience their true flavor and texture if the crop comes shipped from California or a warmer climate. Crops like kale, carrots and turnips will not have been exposed to the frost and therefore will not increase their sugar content. The other advantage of having high sugar content in vegetables is that they are also higher in minerals such as calcium. Of course you can buy the vegetables you are used to at the grocery store but what about their flavor and nutritional content? Standard crops grown and shipped to large stores are not selected for these things. At B & H we are extremely focused on flavor, freshness and nutrient density. That is why we are eating…isn’t it?

Hakurei Turnips
These are not your standard turnips. They are tender like a radish and much sweeter then turnips you may have tried before. I don’t even bother growing the other turnips. This Japanese variety has the versatility of being eaten raw or cooked. Don’t forget to eat the greens! The greens on these turnips are much more tender and not spiny like the standard variety.

Late Fall CSA – November 23, 2016

 

We would like to wish a Happy Thanksgiving to all. And if you do not celebrate Thanksgiving we wish you a happy and healthy time with your family.

We hope you like the fall lineup of vegetables this week. It is a dance each week to give you a practical list and one that has some surprises as well.

This fall has given us many challenges. The summer and spring were so full of abundance and beauty. We put a lot of time and energy into creating new items for our Late Fall CSA. Unfortunately, we were hit with a serious infestation of aphids that I cannot find a cure for. I have heard other farmer’s talk of this but never experienced it myself. Each year is unique and we are reminded to be grateful for everything that we receive. This is the time of year when we think of gratitude but as farmers we wake up every day saying prayers of gratitude. We are so grateful to have a local organic farm near us that can help us to fill in the gaps of where our crops have failed. We and you are truly blessed. May that blessing be in your meals and reward your health.

Mustard Greens
You may or may not be familiar with the mustard family of greens. It is vast and has many flavor profiles. However, no matter which green you are thinking of it is certainly at its best this time of year. Mustard greens, like many other plants, changes flavor based on the temperature and moisture of the environment it is grown in. Mustard greens love cold nights that dip down into the freezing zone. And they love a bit of moisture but not too much.

Many people feel that mustard greens are too bitter and strong. I challenge you to try them this time of year and taste the difference. There is a sweetness mixed in with the bitterness and spice. That sweetness if unlike anything else you will ever taste and it doesn’t last long so the greens must be eaten fresh.

This week we have several varieties of mustards to choose from:
Turnip Greens – very mild and tender. They are coming from our Hoop house this time of year.
Broccoli Raab aka Spring Raab- This is a strong tasting mustard green. The flavor is extremely unique.
Komatsuna – extremely tender and mild mustard green. Don’t forget to eat the stems!
Spicy Mix – this is a mix of a range of baby mustard greens. Yes, it is a bit spicy but it is also sweet and has a lot more flavor than salad mix. It also holds up well to hot salad dressings.

Recipes:
Mustard greens are very tender and can be eaten raw or sautéed. I recommend if you choose to cook them that you only do so for a short time so that they do not lose their crispness. I highly recommend adding them raw to a hot dish, soup or salad dressing. They will wilt beautifully.

 We will have normal deliveries next week for all locations except we will be delivering early to Daniel Boone School District. Please look for an email in the near future to notify you of your pick up change. 
We finally finished planting our garlic for 2017 and we are praying for a great crop next year. We were so blessed with a good crop of garlic this season and the ability to offer you several varieties. Music garlic is sold out for the year but we are excited to offer you Oregon Blue this week. 
We had a poor growing season for potatoes this past season which is why we are not offering them on the list each week. We are ordering them in from a local organic farm and hope to offer them to you as often as possible. Unfortunately, many farmers are in the same boat as us and we could not get a large quantity to order in. 
We are finally excited to be offering salad mix again this week. We had such a hard time germinating the lettuce mix at the end of the summer with the heat. Can you imagine that the lettuce mix we are harvesting for this coming week was seeded in early September? It takes sooo long to catch up this time of year. Coming soon: Yukon gold potatoes, yellow onions, winter squash and head lettuce.

Featured Crop
Each week we like to feature a vegetable from our list that we feel is in its prime. A crop is often filled with the most energy and nutrition when it is at its peak.
 
Celeriac (also known as Celery Root)
This was such a successful crop for us this season. And we are so happy to offer it to you. I find that so many people have yet to try this gem of a vegetable but once they do they will seek it out. Celeriac is the cultivated root of the celery plant. They are 2 separate plants grown for 2 distinct properties – much like beets and Swiss chard. I personally prefer celeriac to celery in most applications because it is much milder and sweeter. Celeriac will store for 5 months in your refrigerator in a plastic or glass container. It must be peeled to eat but is very versatile. We are offering it as an extra this week so that you can try it and store it for a great Thanksgiving side dish.

Late Fall CSA – November 9, 2016

I had a chance to travel out of town this week to a place known for its culinary excellence. The entire time I was still longing for the foods from my own fields. Even the best restaurants are often lacking truly fresh seasonal produce. It reminded me that I am so blessed to be able to work with rich soils and spring water to grow truly high quality produce. I became a farmer because I craved fresh nutrient dense food. And I am so proud to grow it and share it with you. Sometimes you need to get away to be reminded of what riches you have at home. Lemongrass 
This is a new crop for us this year and we have been pleasantly surprised by how easy it is to grow and how popular it is at the farmers’ market.
In addition to being a culinary delight, Lemongrass has many medicinal properties:
The health benefits of lemongrass include relief from stomach disorders, insomnia, respiratory disorders, fever, aches, infections, rheumatism and edema. The defensive antioxidant activity of the lemongrass herb protects against antibiotic-resistant Staphylococcus aureus and helps in maintaining optimum cholesterol levels, cellular health, nervous system, healthy skin and immune system. It is also effective in treating type 2 diabetes, cancer, and obesity, while also aiding in detoxification. It is extensively used in aromatherapy and helps to combat fatigue, anxiety and body odor.

Oooh!!! We are so excited to begin our Late Fall CSA. Some of you are new members and some of you have been with us for the past 30 weeks. Either way we welcome you to a great new season. Thank you for choosing us to provide you with fresh organic produce this season. Fall is so exciting for us; it brings cool nights and frosts which sweeten most veggies. Turnips, brussels sprouts, carrots, radishes and cabbage will have better flavor after a frost than any other time of the year. I am often delighted at the sweetness. What’s New?! 

It is with mixed emotions that we send this email for our final 2016 Summer CSA, although, we are looking forward to welcoming a slightly slower pace for the Late Fall CSA. This week will mark our 30th straight CSA delivery and we are so grateful for the season we’ve had. We grew the business quite a bit this year and it has been a success.

We are so thankful for your support. I realize that most of you signed up for the CSA in order to receive fresh organic vegetables each week. To us your membership means a lot more. It means that you are trusting us to fulfill our promise of providing vegetables to you when you pay in advance. It means that you are supporting a small local farm that is truly dedicated to sustainability and organic farming. We truly are who we say we are and we farm from a personal/moral obligation. By joining our farm you are supporting this mission. You are supporting something so much bigger than just a produce garden.

With your membership money this year we were able to employee 3 full time, 5 part time, and 9 workshare members who are dedicated to learning about organic agriculture. That means that we planted the seeds of sustainability in at least 17 people this year. We were able to keep Paul’s dream alive of having successful organic production on his farm as he is getting older and not able to farm as much. We were able to secure a lease for B & H on the Hartz farm to ensure that we continue farming there for at least the next 30 years. We were able to rebuild our largest hoop house which collapsed in the snow storm this past winter. And we were able to pay off our Kubota tractor. If you think about how far your membership money went and how many lives you have impacted I am sure you will understand why being a CSA member is so important.

Garlic:

A good source of vitamin(s) B6, C, manganese, and germanium.

This week we are offering:

  • Silver White: Full bodied flavor with a moderate bite that increases with storage. Rose-colored cloves in very smooth, bright white medium to large bulbs. Excellent all-purpose garlic; a good eater and beautiful for braiding. One of our longest storing garlics.
  • Music: Good flavor, sweet and pungent, very hot when eaten raw. An Italian variety brought to Canada by Al Music in the 1980’s.

This weekly newsletter will also be posted on our website in the right hand side bar. If for some reason you do not receive an email by Monday, notify us and look to the website for the newsletter. You can still got to the ordering site to order. Each week while ordering is open, the ordering page can be found from our website or the newsletter. On the top menu bar click the Member Actions tab, which will lead you to the Member Login button. Once logged in, click on Summer Half/Full Vegetable Share under Your Stores. You will see the list of available items. Click each one that you would like in your box and click Add to Cart. You may pick 5 items if you are a half share or 8 items for full share. You will see them show up in your cart on the right hand side. When complete, you may click Continue to Checkout or Specify Quantities. (Please do not change quantities of items that only allow one to be ordered.) You may also click on the Extras store to add free items that we have abundance of that week, if applicable.

Summer CSA – October 19, 2016

Items available this week:

  • Winter Squash- Spaghetti – 1 fruit.
  • Cabbage, Napa – 1 large head.
  • Brussels sprouts – 1 stalk. (Equivalent to 1 pint.)
  • Celeriac – 2 medium bulbs.
  • Beets, red– 1 lb.
  • Turnips, Hakurei – ¾ lb.
  • Broccoli – ¾ lb. or 1 medium head.
  • Garlic – 2 bulbs.  Inchelium Red (Voted best tasting garlic by the Rodale Institute.)
  • Eggplant – 1 lb.
  • Sweet Peppers – 1 lb.
  • Pepper, Hot – Mix 3/4 lb.
  • Peppers, Seasoning – ½ lb. These are very special peppers that look like hot peppers and have a similar flavor but 90% of them are not hot. 
  • Tomatillos- ¾ lb.
  • Kale – Lacinato or Curly – ¾ lb. bunch.
  • Swiss chard – ¾ lb.
  • Broccoli Leaves- ¾ lb.
  • Komatsuna – ¾ lb. 
  • Dandelion Greens – ½ lb.
  • Parsley – 8 oz. bunch.
  • Lavender – 4 oz. bunch.
  • Lemongrass- 8 oz. bunch.
  • Tomato, Green – 2 lb.
  • Tomato, Mix – 1 lb.

What’s New?! 

 

This is the second to last week of our Summer CSA.  We are begging you to please return your wax boxes.  This year we have purchased more boxes than ever before.  Please, please return them so that we can reuse them.  Search your cars, garages, basements etc.….

 

Despite the warm fall we have had, the frost is here, as you must have noticed from the harvest list.  We scoured the tomato, pepper and eggplant field and we are offering you a bounty this week.  See the recipe below for how to ripen and freeze peppers; sweet and hot.

 

We are so grateful for the response to our Brussels sprouts dilemma.  We really appreciate your support and understanding.  We try so hard to provide you with high quality produce.  Farming can be a tough job when you baby a crop for 6 months (the Brussels sprouts were planted in May), and at the time of harvest an insect decides they are delectable.  I do believe the insects know when the crop is at its peak.  So eat your Brussels!!!!  We have had a frost and they are sweeter now.
